Pomegranate Chicken Stew

This is a Fesenjan recipe from Allrecipes.com. I modified it per several of the comments, substituting half of the original 4 cups pomegranate juice with chicken broth.

2 tablespoons olive oil
1 1/2 pounds chicken legs, cut up*
1 white onion, thinly sliced
1/2 pound walnuts, toasted and finely ground in a food processor
1 teaspoon salt
3 cups pomegranate juice
1 cup chicken broth
1/2 teaspoon cardamom (optional)
2 tablespoons sugar (optional)
chopped fresh parsley for garnish

  1. Heat olive oil in a large skillet over medium heat. Place chicken and onions in skillet and cook for 20 minutes, stirring occasionally.
  2. Mix in pureed walnuts, salt, pomegranate juice, broth and cardamom. Bring to a boil.
  3. Reduce heat to low, cover, and simmer for 1-1/2 hours, stirring occasionally.
  4. Mix in sugar, adjust seasoning, and simmer 30 minutes more.
  5. Top with parsley and serve over rice.
*Do not substitute chicken breast; the cooking time is too long, and the chicken will become dry.

If you enjoy a very tangy flavor, omit the sugar. I used both the sugar and the cardamom, and I thought the taste was perfect. This is an unusual looking dish, sort of purple and soupy and oily (from the walnuts), but it's just delicious. I usually have a lot of sauce left, and it's too good to throw away. I use it like gravy, pouring it over rice or potatoes. --Sarah

Thanks for writing on our blog - sorry I took so long to respond to you. I didn't even know my Mom had cousins on her Mom's side, haha. I never thought about it, I guess, b/c never met any of them or heard about them that I remember growing up.

I'd love to hear about you too - so you're a wife of an 11 yr old and a 2 yr old. I also LOVE to read! And you live in Texas. That's pretty cool. What do you do online from home as a job? Hi Sarah -

You don't know us (we live in western Wyoming right now). But I saw one of your comments on Melissa Irwin's blog, and occasionally I click on links to learn a bit more about the commentor. Mostly that's to look for people who, like us, are interested in both loving God and "loving our neighbors"

This time, I landed in your list of recipes, which probably doesn't have much to do with loving neighbors (except maybe for taking them meals when they're sick.)
But recipes ARE another thing that are important to us right now - and especially to my wife, Yvonne. Because both of us have wound up on pretty strict (and similar) diets, mostly as a result of a couple of bouts with toxic mold. No white flour, no sugar, very little salt, no yeast, no vinegar - I could go on, but that gives you the idea.

How do you get toxic mold living in the middle of a desert? Because during the boom years here, a lot of the homes and apartments were built very quickly and very poorly. Which led to many, many buildings with water leaks. Which led to a lot of toxic mold. We weren't even aware of it when we moved here, but when Yvonne almost died from it, we learned fast. We're still living with the effects several years later.

So I'm going to steer her onto your site, and encourage her to ask you some questions if she doesn't see what she's looking for. Mostly that'll be variations of a Mediterranean diet, plus new ways to make fruit breads or cakes, etc. (She makes some wonderfully delicious breads using either wheat flour or oatmeal, adding things like raisins, cranberries, zucchini, etc. Got most of those recipies from our mold specialist's office over in Utah, and she's created quite a few variations since.)

Hi, I'm Yvonne Ahlstrom. To give you the whole picture of our diet, I am also allergic to cows milk, many food preservatives, and corn. My concern is keeping with our diet when you have company. We have been sticking with fish and chicken (baked)along with salads, quick breads, baked potatoes, yams, and vegetables and instead of milk, rice milk. Also we can only have wheat pasta or spinach pasta. It's the healthiest diet I have ever been on.
